sweet tater cakes

yum. and easy.

throw a forked sweet potato in the oven for about 1 hour. let it rest and peel the skin off. mash it up. stew pinto beans with some poblanos and onions, seasoned with paprika, salt, etc. mash it all together with an egg, a bit of flour, some cornmeal, a tbsp of baking powder, more salt, etc. scoop into a fry pan, flip and bake! these get nice and crispy on the outside, and poof a little while they bake. i love the grit of the cornmeal.

vegan version met some success, omit the egg and the dry stuff. roll the mash in cornmeal, fry and bake.

we sauced it with a fun mayo- a few scoops from a bottle of jerk sauce, some roasted red peppers and chili paste.
