sunday scramble

how nice to get to have a delish sunday brunch two weeks in a row!  i am enjoying taking advantage of the weekend days off for cooking and eating.  knowing that in my line of work, these days off aren’t going to be the norm…

yesterday, i boiled the red potatoes then beets until they were a bit soft.  then i roasted them after a toss in oil, s & p. 

today i reheated them on the griddle while i toasted the bread.  scrambled eggs with a bit of goat cheese.  and fresh basil on top.
