rice cakes

there was leftover rice from a stir fry.  and in the spirit of making leftovers into something new and exciting, i thought: rice cakes!

i diced a bit of red pepper, red onion and zucchini.  sauteed for a bit in oil and added to the rice.  along with a few scoops of mayo, crumbles of goat cheese, sriracha for flavor and some s & p.  formed the cakes with my hands and rolled in breadcrumbs.  browned the cakes in oil and finished them in the oven.

lightly sauteed the rest of the red pepper, red onion and a few more zucchinis- all cut long and thin. 

it felt like a really healthy, veggie packed dinner.  nevermind the fried cake and gooey goat cheese!

    may do a version of this tonight. there’s always rice in my fridge and i never use it all before it heads down the wrong road!
