lemon/elderflower sorbet

i’ve been feeling so crazy for st. germain elderflower liqueur.  i think because i can tell that spring is around the corner and i am ready for light and sweet and fruity.  (next up- lillet sorbet!) 

of course, i was first introduced to this liqueur at JGB in a lemony cocktail called “the left bank”.   

for the sorbet: i steeped about 4 tbsp. dried elderflowers in hot simple syrup.  when it cooled, i strained and added 2 c. lemon juice and the small, travel sized bottle of st. germain.  chilled and churned. 

the texture is right on, the sweetness is refreshing and balanced with the magical elderflower flavor!
